The old adage "worth a miller's thumb" refers to a purveyor who is not only honest, but provides superior quality milled grains. A miller tests flour by holding it on the fingers and running a thumb across. Millers attentive to quality would make this motion dozens and dozens of times a day, causing their thumbs to become flat and misshapen.
